Bertha’s Chocolate Cake

Ingredients

¾ cup Sugar
4 eggs separated
6 oz. Semi-sweet chocolate
1½ sticks un-salted butter
6 tablespoons flour

Instructions

  1. Preheat oven to 375º
  2. Grease 8″ round cake pan
  3. Beat sugar and egg yolks
  4. Melt chocolate and butter in a double boiler
  5. Add sugar and egg mixture to double boiler and mix over low heat until well blended
  6. Mix in flour
  7. Beat egg whites until stiff
  8. Fold egg whites into chocolate batter
  9. Bake 25-30 minutes or until toothpick test shows center is cooked
  10. Allow to cool for 2 hours, remove from pan and frost
  11. Keep in refrigerator until ready to serve.

Frosting

3 oz. semi-sweet chocolate
3 tbsp. brewed coffee
3 tbsp. butter

  1. Melt chocolate and coffee in double boiler
  2. Remove from heat, add butter and stir until melted
