Pinwheel Cookies

Ingredients

  • 3 Sticks butter, room temperature
  • 1½ cups sugar
  • 1 egg
  • 3 cups flour
  • ¼ cup cocoa
  • ¼ teaspoon salt

Directions

  1. Mix together butter, sugar and egg.
  2. Mix in flour and salt.
  3. Divide dough in half, place one half in bowl, cover and refrigerate.
  4. Take second half of dough and mix in cocoa, cover and refrigerate.
  5. Refrigerate for at least 3 hours.
  6. Take each dough and separately roll out flat into a sheet about ¼” thick.
  7. Lay one sheet on top of the other.
  8. Starting at one end, roll into a log, take the log wrap and put in freezer for at least 2 hours.
  9. Preheat the oven to 375º.
  10. Take frozen log and slice off pieces, place on cookie sheet and bake for approximately ten minutes or until edges start to brown.
  11. Place hot cookies onto paper towels and allow to cool.
